One of Italy’s most iconic dishes – Ragù Bolognese the classic and comforting meat sauce from Bologna.
For this little beauty we have taken Fullblood Wagyu Beef, tomatoes, onions, carrots, celery, garlic, oregano, pepper & rosemary and cooked it down slowly to create an incredibly unctuous and warming Ragù sauce. The Fullblood Wagyu Beef has been minced giving this sauce an incredible beefy flavour and texture.
Wagyu fat when rendered, provides the perfect vehicle for sautéing the vegetable soffritto – a mixture of carrots, onions, and celery. Once the classic vegetable mixture has softened, we add a generous amount of aromats such as rosemary, bay leaf, oregano, plenty of garlic and of course salt and pepper for seasoning. These aromats give this sauce an incredible level of depth and complexity.
