Minas is the most famous coffee blend in the Balkans. Roasted, grounded and packed, this blend yields a very aromatic and pleasant brew.

Directions for making coffee:

1. For each cup desired, measure one demitasse cup of cold water into a briki or narrow-necked coffee pot.

2. Add one teaspoonful each of coffee and sugar (or to taste). Stir well.

3. Bring to a boil over medium heat.

4. As coffee begins to rise, remove from heat and pour into demitasse cups, naviding the foam equally between each cup.

NOTE: Coffee should not be stirred once it has been poured.
