Produced by José Páez Lobato, a family business who have been producing fine sherry vinegar for over 60 years in Jerez, southern Spain. Capirete vinegars are aged in the solera method, in which the vinegar is matured in a succession of American oak barrels that were originally used to age sherry wine. Their sherry vinegars are made from Palomino grapes, and we stock two varieties, aged for either 20 or 50 years. They have a powerful aroma with notes of vanilla, dried fruits, and wine-soaked wood.
